Independence Single Malt is an Irish whiskey distilled three times, initially matured in American bourbon barrels, and then finished in Irish Imperial Stout casks. Bottled at 40.7% ABV, it’s designed to showcase both the smooth creaminess associated with triple distillation and the deeper notes lent by stout cask maturation. It’s produced in Ireland and marketed under the “Independence” brand (formerly Proclamation Whiskey for some expressions).
Tasting Notes:
-
Appearance: Warm amber with golden reflections; medium viscosity.
-
Aroma: Chocolate, tonka bean, blackberry, toasted oatmeal, with undertones of vanilla and cream.
-
Palate: Rich dried fruit, mocha, cinnamon spice, creaminess; flavors of stout-like roast coffee and chocolate
-
Finish: Smooth, lingering, with notes of toasted coffee grounds, mild oak, and a subtle chocolatey bitterness.
-
ABV: 40.7%
Serving Suggestions:
Serve neat or with a large ice cube to let its stout and bourbon barrel influence emerge. It works well in whiskey cocktails where deeper, richer flavors are desired (e.g. an Old Fashioned with a splash of stout reduction, or a chocolate bitters twist). Pairs nicely with dark chocolate, roasted nuts, or desserts like tiramisu.
